Why it looks so plain under the hood
Outlook renders email with Word’sengine, not a browser’s — no flexbox, no grid, no stylesheets. So this uses a table with every style written inline, which is the one thing that looks the same in Gmail, Outlook, Apple Mail and the rest. A signature that only looks right in one of them is worse than a plain one that looks right in all.
About your photo:a signature can’t carry the image itself, only a link to it. Use a URL that will stay up, and expect some recipients to see a blank space until they choose to load images — that is their mail client, not you. The text-only layout avoids the problem entirely.
No tracking pixel. Some signature generators slip one in. This one has nothing in it that you did not type.
